  1. Spiral the carrot and zucchini first and add to a bowl
  2. Add the dried herbs and the olive oil, give it a good toss with your hands
  3. Place in a fry pan and make three small sections for the eggs to sit
  4. Crack the eggs into the small sections you have made and place the lid back on, keep it on a low heat the whole time.
  5. When ready to plate than add the fresh parsley and amino sauce
