Healthy Beef Enchiladas
Ingredients:
- 1 lb lean ground beef
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 small onion, chopped
- 1-2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 8 whole wheat or corn tortillas
- 1 cup shredded cheese
- 1/2 cup Greek yogurt (instead of sour cream)
- 1/2 cup fresh cilantro, chopped (optional)
- 1/2 cup salsa
- 1 cup spinach or kale, chopped
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, cooking for 2-3 minutes until softened.
- Add the ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the cumin, chili powder, diced tomatoes, black beans, and spinach (or kale). Let the mixture simmer for about 5 minutes.
- Lightly grease a baking dish and spread a thin layer of salsa at the bottom.
- Fill each tortilla with the beef mixture, roll them up tightly, and place them seam-side down in the baking dish.
- Top the rolled enchiladas with the remaining salsa and sprinkle with the shredded cheese (optional).
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Serve with a dollop of Greek yogurt and fresh cilantro on top.
