Healthy Beef Enchiladas

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, cooking for 2-3 minutes until softened.
  3. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in the cumin, chili powder, diced tomatoes, black beans, and spinach (or kale). Let the mixture simmer for about 5 minutes.
  5. Lightly grease a baking dish and spread a thin layer of salsa at the bottom.
  6. Fill each tortilla with the beef mixture, roll them up tightly, and place them seam-side down in the baking dish.
  7. Top the rolled enchiladas with the remaining salsa and sprinkle with the shredded cheese (optional).
  8. Bake for 20 minutes, or until the cheese is melted and bubbly.
  9. Serve with a dollop of Greek yogurt and fresh cilantro on top.
