Chili Lime Shrimp Lettuce Wraps (Dairy-Free & Gluten-Free)

Ingredients
For the Shrimp:
- 500g shrimp (peeled & deveined)
- 2 tbsp olive oil
- Juice of 1 lime
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- Salt & pepper to taste
For the Toppings:
- 1 cup purple cabbage, shredded
- 1 small carrot, julienned
- ½ cucumber, thinly sliced
- 1 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges for serving
For the Dressing:
- 2 tbsp olive oil
- 1 tbsp lime juice
- ½ tsp honey or maple syrup
- ½ tsp Dijon mustard
- Pinch of salt
To Serve:
- Large butter lettuce leaves or romaine hearts
Instructions
- Marinate the Shrimp: In a bowl, mix olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Toss in the shrimp and let marinate for 15 minutes.
- Prepare the Dressing: Whisk together olive oil, lime juice, honey/maple syrup, Dijon mustard, and a pinch of salt. Set aside.
- Cook the Shrimp: Heat a pan over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and cooked through.
- Assemble the Wraps: Layer lettuce leaves with cabbage, carrot, cucumber, and avocado. Add shrimp and drizzle with dressing.
- Garnish & Serve: Top with fresh cilantro and a squeeze of lime. Enjoy immediately!
