HEALTHY LUNCH BOX MUFFINS

A great addition to any kiddies lunch box or even your own!

INGREDIENTS

METHOD

  1. Pre heat oven to 180 degrees. Place patty cake pans in a 12 hole muffin tray
  2. Using an electric mixers (blender is too much) whiz all the above ingredients together except for the blueberries and choc chips
  3. Seperate half the mixture into another mixing bowl add blueberries to one bowl and the chocolate chips to another
  4. Spoon the mixture into the patty cake pans and place in the oven for 20-25mins
  5. These muffins can be kept in the freezer and taken them out when needed which makes them even more lunchbox friendly and always on hand for a back up
