LAMB & MINT MEATBALLS

A refreshing way to help hit your protein and enjoy meal prep again.

INGREDIENTS

METHOD

  1. Add the mince, onion, mint, mustard, egg and breadcrumbs into a mixing bowl and combine well
  2. Place cling wrap on top and leave in the fridge for at least 30mins or more
  3. Roll the mince mixture into rissole sized balls and place on a plate
  4. Heat a large pan with the olive oil in it and start to cook the meatballs
  5. Once they are cooked through serve on top of the tortilla and add the diced cucumber, fresh mint and coconut yoghurt
