Cut the chicken into quarters and sear off in a deep/large frying pan with the olive oil for 2 mins each side
Pre heat the oven at 180 degrees, fan forced
Cut the pumpkin into thick pieces and coat in the maple syrup and place on a lined baking tray
Roast for at least 3o mins
Take the chicken out and set to the side. Add the onion, olive oil and the thyme, cook until the onions are lightly coloured
Add olives and the chicken in the large saucepan and than pour in the stock and let it come to the boil and than turn the heat down to low and let it simmer for a good 30mins.
Once your chicken is cooked through and the pumpkin is ready, plate up and enjoy!
