INGREDIENTS
- 2 fillets of Basa
- 500g sweet potato, chopped & quartered
- 250g potato, chopped & quartered
- 500g cherry tomatoes, chopped
- fresh parsley
- 2tsp olive oil
- 1-2 tsp ground cinnamon
- 1tsp smoked paprika
- 1tsp garlic, crushed
- 1tsp fresh ginger
- 1tsp nutalex
- 2tsp dried mixed herbs
METHOD
- Pre heat the oven to 200 degrees, fan forced
- Chop the potatoes and sweet potatoes into quarters, place in a mixing bowl and add olive oil, 1tsp of the mixed herbs and toss well
- Place on a lined baking tray and place in the hot oven for 25mins
- Coat the fish in smoked paprika, mixed herbs and place in a fry pan with the tsp of nutalex and garlic, once the fish is in the fry pan add the ginger to the top
- Turn the fish over after about 4mins and cook for another 4mins with the lid on.
- Chop the cherry tomatoes and fresh parsley ready to plate up once the potatoes are finished roasting
